i am still in a little bit of a pumpkin kick

and i tried this new recipe over the weekend

Pumpkin Pancakes

Ingredients:

1 1/4 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/8 teaspoon nutmeg
1/8 teaspoon ground cloves
1 cup milk
6 tablespoons pumpkin puree
2 tablespoons butter, melted
1 egg

Directions:

Stir together the flour, sugar, baking powder, cinnamon, ginger, salt, nutmeg and cloves in a medium bowl.
Whisk together the milk, pumpkin, butter and egg in a separate bowl. Fold this mixture into the dry ingredients.
Melt butter in a skillet over medium heat.
Pour 1/4 cup batter for each pancake and cook approximately 3 minutes per side.
Serve with butter and maple syrup.

it was all sorts of deliciouso. try it.

and pair it with some mandarin spice tea.
it will be perfecto!

i might have slipped on my beloved fleece and a pair of jeans right after

this photo was taken. but not to worry, i stick to my word. i took all of

the nonsense right off when i got to work and i was once again beautiful.

i was just suddenly inspired (seriously just now) to open a boutique called

pretty you. pretty bike. where i would sell pretty bikes (obvy) and pretty clothes

that are durable/warm/comfortable enough to wear when biking.

i mean, i'm brilliant.

yesterday i went through an episode where i hated my hair, hated my clothes,

hated my sad-really-nothing-to-complain-about-life

but today i'm pretty content.

it's strange how sometimes i get that way, and then 24 hours later

i'm as giddy as can be.

kind of a side note- i complain (a lot) about things and think that

"oh if i just had this" or "if i could just do this.." that

i would be happier. even though we all know that isn't the case.

sooo...since it's the new year and such

i would like to make a few goals.

yes the cliche goals, that everybody makes every year.

it makes me feel like i'm getting somewhere, helps me feel better about myself!

goals for 2012

1. no complaining.

2. keep biking :):) (my new bike!!)

5. be more appreciative

well i hope all of you have finished your christmas shopping

because i have not. and i am s-tressed out about it.

and i just remembered i was stressing about my flight too. ugh

this week has been pretty darn stressful.

speaking of...i forgot to tell you.

so i went to the doctor's the other day

because well, my urine was red. santa red.

and red pee is something to be concerned about.

so i went to the doctors, did a urine test....

and the doctor comes back to tell me the it wasn't blood that was making it red..

i paid a $20 co-pay for this doctor to tell me that

the beets (first time eating beets mind you) i ate for dinner previously was the cause..

naturally i was livid and extremely embarrassed, my face was as red as my pee.

they need to put a disclaimer on the beets when they sell them.

well

anyway, merry christmas. here's to good health, beets and the holidays. cheers.

last week i was able to go to a lorie line concert with sean's family.

sean's cousin nate is their drummer,

we also got to go inside their tour bus, which was also

on a side note: i rearranged my living room, i started my new years eve cleaning a little early

i also didn't realize how wonderful thrift stores get during the holidays!

i found almost all my ornaments there!

i had brunch at my apartment last sunday for sean's family.

i was very pleased with the results! oh gosh, it was delish. i am so proud.

i was so blissfully happy the rest of the entire day and the whole week, that is how well it went.

i'm still gloating over the fact that sean and i made everthing from scratch.

very-thick-deli-cut (first time i bought such a thing) bacon

sweet potato hash browns

and of course some fresh strawberries and blackberries

(not quite the season for them, but they were all the same, very delicous.)

in my high festive spirits, i have been baking, cooking, wrapping...

i might just have myself a holiday party later this month.

and i'll probably have another one for my friends back home. oh i love home food parties!

last weekend i went to a winter festival

at stove prarie elementary.

it seemed to be a terrible place to live, but a beautiful and serene place for festivity.
it was so cold! frigid is a better word for it.
got a few gifts there, supported some elementary children and bought
their baked goods (not too shabby) and had a grand ol' time.
(support local! especially during the holidays!)

i really try and stay away from watching t.v. during flights

since it makes me a little sickly

but for some reason i can never find anything to do on planes.

i come pretty prepared, but it gets all so boring so fast.

i read, hummed, looked out the window...and only five minutes had gone by..

no one wanted to talk to me. and i wasn't allowed to talk to myself.

then the flight attendant offered me some tea.

what? tea! they have tea on planes!

i knew they had coffee but who wants to have to constantly

go to the bathroom (possibly numbers 1-3) on a flight

especially when it's one of the measly 50 minute ones.

so i had tea. and i did enjoy. thoroughly

the only problem was that the tea came in a styrofoam cup.

and there is nothing worse than styrofoam. oh i hate it. but don't worry

i used that extra plastic cup they always give you for some reason.

apparently i started a trend because

the lady next to me and her daughter (i assume) also ordered the same thing.

ha, trend setting me. i'm so cool.

another cool point i earned today-i was moved to the front of the plane!

not quite first class but i was able to sit amongst the wealthy and act as if i was of their kind.

and wealthy did i feel. except when i was the only one who
didn't order a snack, apparently they aren't free anymore.

while in salt lake it went to the chocolate. i really like them.

i am pretty set on getting a real christmas tree, today i went to go get one.

and little did i know how expensive these fir trees, and noble trees

and many other, what i like to call them (seriously they all look the same.), pine trees.

apparently these noble trees are all the rage.

they are pricey! i mean at least $$$$-$$$$$.

ugh it was a terrible experience.

so next weekend i am going to the woods to go chop myself a tree

all i need is a

10$ rocky mountain national park x-mas tree chopping permit.

i just came back from a 1 1/2 day trip again.

i really dislike these quickies.

i can't wait for christmas when i can actually stay for longer than 48 hours!

i just left my cubeness in salt lake with my parents.

i'm really going to miss not having a car!

sometimes i can't decide if school is worth it.

you dedicate years and years to study and gain all this knowledge

so that hopefully you are rewarded in the future with a career that best suits you.

and in the proccess you might have to give up you're car, work two jobs...and yet

there are so many students who have graduated with fabulous degrees

and still work the average-high-school-hourly-minimum-wage job.

oh school! you better be worth it!

putting my rant aside. i'm glad i was able to see my family and spend time

with a few friends. miss them already.

i used to hate movies.

i hated them because it was a waste of eight doll hairs and two hours.

i mean you could read instead, that's like a movie but better

because it's in your head.

but suddenly, most likely because of my recent movie fast,

i had an unusual desire to watch a movie.

so kels and i went to the dollar movies...which is now 3.50....

(strange, i'm pretty sure they are called the dollar movie theater..whatever)

and watched back to back movies. thank you graham for the freee tickets!

apparently i have neglected to tell you about my awesome boulder trip.

i love boulder, always have, always will. it has a special place in my body.

the scenery is beautiful, campus (awesome) and

for some reason i spotted hugh hefners' (one of the many) limo's there.

in boulder, colorado of all places i'm not quite sure.

but hey, it's hugh, it must have been important/naked.

anyway i ate at the sink, which had terrible service and extremely good food

i finally gathered up the courage to go to ikea this weekend.

kadi had warned me of it's terror

the lines,

the crowds of people,

the endless wishlist that would never be satisfied...

but i went. and obviously it was awesome

and obviously i came home with only tupperware...

(but i've been to the one in salt lake so it wasn't that big of a deal.)

and i'm saving my money to get this baby. sorry ikea, you just weren't good enough

it's was so fun to go with ikea virgins.

they were like little children on christmas morning seeing all the different rooms

but anyways, just to let everyone know, the lines aren't that terrible.

just make sure you get there right as it opens and leave by 3.

this weekend i went to new west fest.

it's not new, but it is actually in the west extremely fun and deserves a woot festival.

this weekend i went on a hike again in the rocky mountains,

but instead of turning right after the entrance, we turned left...dun dun dun.

it's true we are broadening our hiking horizons. (this annual pass is really paying off!)

sean, his mother, and i hiked for a long but short 6 hours up to sky pond.

scrambled up a water fall, beasted through treacherous winds. it was quite the adventure.

i would rate this hike a medium high. anyway!

my one person home. part one.

so i'm pretty settled in my new place.

i love it.

it's clean, smells ok, and quiet.

actually too quite.

living in a home with ten people crowding every square inch of the place,

and now that i am here, i long for my sisters screams and my mothers' laughs.

oh it's so quite at home. now i find solace at the local coffee shop.

i was going to do another post on my families trip (we went up into the rocky mountains and such)

over the weekend my family (leaving the 3 girls behind and adding 2 exchange students)

packed all of my things and drove to colorado.

i just love them.

they helped my load the uhaul, unload, pack and unpack, i pretty much had my own moving crew.

they only stayed one day, which was definitely not enough.

saying goodbye was awful!
my mom started to cry, and i started bawling.

i probably cried for a good hour and a half after they left, i still can't really talk to them

because every time i here their voice, i choke up

oh i miss them!

but it was very fun to have them come to my new town and help me settle in my new apt.

i can't wait until they come and visit me again! (this time with everybody!)

it was beautiful up there today! there was still a significant amount of snow (very cool breeze)

but such a good break from the hot hot valley.

before getting our drive on, we stopped buy a little donut shop in estes park.

these donuts only need one word of explaining. delicious-o

we got there fairly early (8:30) and already things had sold out...i miss my donut cake already.

we then ventured through a windy and very high altitudey road...talk about sickly.

reminds of a time a good friends once was sick on a ride..(lagoon, ehem) anyway,

i eventually got better, and we hiked through a beautiful tundra, ahhh~

saw a bunch of beavers, i mean marmots, bought a retro post card and came home.

i had a lovely day.

bought my plane ticket to slc, and booked my uhaul trailer, i'm so ready to move!

now that i (technically) live in fort collins

i get to see sean everyday! and it is the weirdest.

for instance:

my phone battery lasts for days!!

that's all actually.

but it is seriously boggling my mind how long i haven't charged my phone!

and still full battery!

anyway here are some updates on the living situation:

i am going to go look at an apartment for the second time,

but this time bringing my second opinion people.

i am also realizing how teeny tiny fort collins is (salt lake! you booming city!)

i have not explored any fun stores and such yet, but i will soon

hopefully i will have a place and have all my stuff here by the end of this week (crossies!)

tomorrow is some sort of bike to work and eat breakfast along the way day

i made it to fort collins! i'm here finally!

but soon i will have to make another trip back to get the rest of my things.

still looking for an apartment! or should i say, i'm actually starting tomorrow.

(the job is a green go light though! the babies are adorable!!)

tomorrow will be filled with apartment hunting and hopefully end

with a pretty new apartment to call my own. wish me luck!

i've been on month long trips before and been away from home for quite some time,

but for some reason it's only two days since i left and i really miss home.

here she is!

the big 3 year old girl!!!!! she made it!

this was probably the best toddler party i have every attended.

we had a little salmon, cream cheese and any other topping (you name it!) bagel breakfast bar,

mimosa's for the adults, a raspberry chocolate cake from the one and only french bakery,

jumping house, tea sets! absolute paradise. i was so full and happy.

it's already been a whole year since i started watching little divna. and she is not so little anymore!

i sad.
